Preparation time approx. 15 min:

Peel shrimp, remove intestines and clean. Cut chili pepper into rolls. Crumble blue cheese and chop cress. Peel and finely dice onion. Rub off thyme. Bake bread until crisp and cut into slices. Cut grapes in half and remove seeds.

Sauté onions in hot clarified butter until translucent, dust with flour, stir in and add cold vegetable soup and stir until smooth. Add the wine and simmer gently. Add whipped cream, season with herb salt and pepper. Fold in cheese crumbs and thyme. Heat frying pan with sunflower oil or other vegetable oil, fry the shrimps and chili grapes briefly at low temperature.

Serve:

Arrange soup in deep cup or plate. Spread the shrimps with chili and grapes evenly on top, sprinkle with cress and garnish with thyme sprigs. Add bread.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these also stand out for their fresh taste!
