Instructions:

Sauté onions (very finely chopped) in butter until golden. Briefly add barley. Deglaze with wine and soup and add bacon. Simmer soup on low heat until barley is cooked (about 50 min)

When the barley is cooked, remove the bacon and cut into small cubes. Add the bacon 10 minutes before the end of the cooking time. Refine with cream. Add bacon cubes Season with salt & pepper to taste.

Our tip: Use a bacon with a strong flavor – this will give this dish a special touch!
