Instructions:

Put the veal bones on cold with water, bring to a boil and cook for about 4 – 5 hours. After half the cooking time, add the chopped root vegetables and onions, the bouquet garni, the peppercorns and spices and a little salt.

When the cooking is finished, strain the stock through a cloth.
