Pasta dishes are always a good idea!

Season veal steaks with salt and pepper on both sides. Sear briefly, but hot, on both sides in olive oil, place in a gratin dish and keep warm (in the stove at 60 °C ).

Sauté the celery in butter. Extinguish with a small amount of clear soup and briefly lightly bubble. Season with salt and freshly ground pepper and spread the celery evenly over the veal steaks. Cover with thin slices of Gorgonzola and bake in a heated oven for about ten minutes.

In the meantime, cook the pasta in salted water until al dente.

Melt the gravy with the rest of the celery stock and boil it together with the whipped cream, simmering a little.

Drain the pasta well and mix with the stock. Arrange noodles and veal steaks on plates, garnish with herbs as you like.
