For the vanilla crescents, preheat the oven to 180 degrees and line two baking sheets with baking paper. Quickly knead all ingredients (except powdered sugar and vanilla sugar) into a dough and chill for about 30 minutes.

Dust a work surface with flour and shape the dough into rolls about the thickness of a thumb. Divide the rolls into 4 cm pieces with a dough card and shape them into croissants. Spread them on the baking sheets and bake in the hot oven for about 12 minutes until the croissants are golden brown. Let them cool down.

In the meantime, mix powdered sugar and 2 packages of vanilla sugar in a bowl. Roll the cooled vanilla crescents in the sugar mixture and immediately put them in a well-sealed tin.
