For the Swabian sausage salad, first cut ham sausage and black sausage into coarse pieces. Instead of black sausage, you can also use blunzen or tongue sausage.

Remove the peel from the onions and cut them into fine rings. Rinse and clean the red radishes, cut them into rings as well.

Mix everything together in a large bowl.

Mix vinegar, salt, a pinch of sugar, water, enough black ground pepper and oil to make a marinade to your taste, pour it over the sausage salad and mix well. Cover and let marinade for at least 1 hour.

Before serving, season with vinegar and freshly ground pepper, if desired, and sprinkle the Swabian sausage salad with enough finely chopped parsley or chives.
