For the stuffed tomatoes, boil, peel and mash the potatoes. Finely chop the olives and mix with salt and pepper with the potatoes.

Cut the top off the tomatoes and hollow them out. Cut the mozzarella into thin slices.

Set aside eight large slices of mozzarella and cut the rest into small pieces and mix with the potatoes.

Fill tomatoes with potato mixture and top each with 1 mozzarella slice.

Place tomatoes on a baking sheet lined with baking paper and bake at 180°C for about 10 minutes. Serve the stuffed tomatoes.
