For the stuffed pumpkin, cut off the top of the pumpkin and hollow out the flesh (this can be used for something else later).

Brush the hollow pumpkin with olive oil (inside and out) and salt. Then put the lid on and put the pumpkin in the oven at 200 degrees for 35 minutes.

Finely chop the onion and fry it in oil together with pressed garlic and minced meat, season with pepper and salt.

Put everything on the side. Then cut the cleaned mushrooms into slices and roast them in the resulting juice from the previous roasting.

Cut the pumpkin flesh into bite-sized cubes and cook with the Provence herbs in the vegetable soup for 5 minutes.

Stuff all the vegetables and meat into the pre-cooked pumpkin with the rice and mushrooms. Pour some vegetable soup over it and bake at 200 degrees for another 45 minutes.

Put the lid on only in the last few minutes.

Preparation Tip:

The stuffed pumpkin can also be supplemented with cubes of feta and baked. This is especially delicious.
