Instructions:

For the steak tartare with fried potatoes, first peel the potatoes and cut them into slices. Place them on a baking tray covered with baking paper, salt them and put them in the oven at 180-200 °C for about 20 minutes (the potatoes should then be soft on the inside and crispy on the outside).

In the meantime, drain the pickled gherkins and capers and chop finely. Peel shallot and dice just as finely.

Mix egg yolks with mustard and Monini Classico olive oil. Add lemon juice, ketchup and a few dashes of Worchester sauce and Tabasco. Stir in shallot. Season well with salt and pepper. Let stand for 10 minutes.

Trim the meat and dice very finely. Mix into the sauce with a fork. Stir in chives, parsley, capers and pickles. Season to taste with salt and pepper.
