For the spicy filled wholemeal pancakes, first prepare the pancakes. For this, mix the flour and salt well with the milk, beat the eggs and stir in.

Let the dough swell for about 15 minutes and gradually bake the pancakes. For the filling, cut the leeks into thin rings, finely dice the ham and peppers and grate the carrots.

Sauté the leek and carrot pieces in a little oil and stir in the tomato paste. Gradually stir in the ham, peppers, peas and the corn.

Mix in the sour cream well and season everything with salt and pepper. Place a little filling in the center of each pancake, sprinkle with cheese, roll up tightly and arrange side by side in a baking dish.
