For the spelt cake with apricots, brush the baking dishes with Kronenöl Spezial with a fine butter flavor and dust with flour. Preheat oven to 160 °C (top and bottom heat).Cut dried (fresh) apricots into approx. 5 mm small cubes, mix with apricot juice and let stand for 2 hours at room temperature (fresh apricots only 20 min.).Sift spelt flour and baking powder. Beat eggs, powdered sugar, salt, vanilla sugar and grated lemon zest until well frothy (at least 10 minutes). Slowly pour in Kronenöl Spezial with fine butter flavor while stirring constantly, continue beating the mixture for 1 minute. Gently fold in spelt flour mixture and apricot mixture.Pour the mixture into the prepared ramekins (fill to 3/4 height) and bake on the middle rack for about 23 minutes (about 40 minutes if preparing in a loin pan). Remove from oven and let rest for 5 minutes, then turn out of the pan.For the garnish, chop milk couverture and melt slowly over a water bath. Dip apricots halfway into the dissolved couverture and place on a sheet of baking paper. Place in the refrigerator for 30 minutes and then cover the spelt cake with apricots.

Serve the small spelt cakes with apricots with a dollop of whipped cream.
