Total time: 1 hour

Ingredients:

Instructions:

Boil about 1-1.5 liters of water in a soup pot. Add greens and cook the soup meat in it for 1 1/2 – 2 1/2 hours until tender, depending on the quality.

Remove meat and cut into small pieces. Strain the soup.

Blanch (scald) the tomatoes briefly in boiling water, peel and cut into small cubes. Then chop the onion and sauté in a pot in a little butter until light. Stir in the tomato paste and cubes and sauté briefly.

Peel the pickled cucumbers, cut into slices and add. Pour in some soup, add bay leaf and let everything simmer on low heat for about 5 minutes.

Pour in the rest of the soup and bring to the boil. Cut the ham into strips, the sausage into slices and add both together with the olives and the meat cubes. Season to taste with salt and pepper and a little lemon juice.

Serve the soup in warmed bowls or plates and garnish each with a dollop of sour cream.
