For the dressing, mix the passion fruit juice with the remaining ingredients. Salt and pepper the salmon trout fillets and fry them in a pan in hot olive oil on the skin side until the fillets are almost cooked through but still nice and glazed. Cut the young onions into 3 cm pieces and sauté them in another pan in a little hot olive oil. Marinate the warm onions with some of the passion fruit dressing and divide them lukewarm among the plates. Place the salmon trout fillets on top. Finely chop the radishes and spread them on top. Garnish with herbs and marinated lettuce as desired. Drizzle the remaining dressing over the top.
