For the salmon pie, dice the salmon fillets very small. Mix with dill, lemon juice and lemon zest, salt and pepper.

Line a quiche dish with baking paper and place a roll of puff pastry on top and cut into rounds. Spread the salmon mixture on it and put the 2nd puff pastry roll on top as a lid and cut it round again.

Brush the salmon pie with egg, sprinkle with sesame seeds and bake until crisp.
