Blinis :

Stir the yeast in the water, then stand for half an hour. Separate the four eggs, beat the egg whites until stiff. Stir the warm milk with the buckwheat flour, yeast, sugar, salt, egg yolks and melted butter, then fold in the beaten egg whites. Cover the dough with a dishcloth and let it rest for 120 minutes. Then heat oil in a frying pan and bake the dough into small pancakes – blinis – until golden brown.

Herring buns

Cut all ingredients into fine cubes (sprinkle the apple cubes with the juice of one lemon) and mix them together. Pour the herring bagels on the blinis form. Decorate with dill and cherry tomatoes.

Franz Lauter recommends a dry German white wine to go with it.
