Instructions:

For the rubies, first quickly knead all the ingredients for the shortcrust pastry into a smooth dough. Shape into a ball, wrap in plastic wrap and refrigerate for at least 30 minutes.

In the meantime, line a baking tray with baking paper. Preheat the oven to 200 °C.

Roll out the dough thinly and cut out circles. Place on the baking sheet and bake for about 10 minutes. Allow to cool.

In the meantime, for the filling, bring the milk, sugar and spices to the boil. Add the nuts and stir in the rum at the end.

Spread half of the cookies not too thinly with the nut filling. Place the other half on top. Now spread the cookies all around with the apricot jam and roll in the coconut flakes. Place a dab of currant jam in the center of each ruby.

Preparation Tip:

You can, of course, use any other red jam of your choice for the rubies.
