Peel the onion, chop finely and fry in butter until golden. Cut the mushrooms into flakes and fry them.

Beat the eggs and pour over the mushrooms. Stir until the eggs have set.

Season the roasted mushrooms with egg with a little salt and pepper, garnish with freshly chopped parsley before serving.
