Rinse the meat, dry it. Score the pork rind, rub with salt and brush with 2 tbsp. oil.

Place on the roasting rack over the fat pan and roast in the heated oven at 200 °C for approx. 2 hours. After approx. 90 min. sprinkle with the herbs.

Remove skin from tomatoes and dice. Dice spring onions and zucchini. In the last 20 min on the fat pan form. Salt, season with pepper and pour the chicken soup. Remove the peel from the garlic and cut into slices. Fry in the remaining oil until brown. Remove the meat and cut into slices. Season the vegetables and serve with the roast. Garnish with garlic and herbs.
