Red lentils are mild in flavor. They have a short cooking time and turn yellowish during cooking. Fresh coriander can be replaced with parsley.

Boil the red lentils with tap water in a saucepan. Remove the peel from the ginger, grate finely and add to the lentils with turmeric and enough salt.

Cook the lentils over medium heat until soft on the stove in 10 minutes. Then remove the saucepan from the heat.

Heat the ghee in a frying pan over medium heat. Brown the cumin, chili spice and ground coriander in it for 1 minute, stirring continuously. Add the spices to the lentils and mix neatly.

Rinse the fresh coriander, pluck off the leaves, chop finely and sprinkle over the lentils just before serving.

Serve with thin Indian flatbread or white bread.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
