For the quinoa-avocado salad, first prepare the dressing. Mix all the ingredients together and season with salt and pepper.

Rinse the quinoa well and boil it in 450ml water until soft. Then drain and season with half of the dressing.

Peel the avocado and cut out small balls, crumble the feta cheese coarsely with your fingers. Mix both together and toss with the remaining dressing.

On a large platter, spread the quiona first, arrange the avocados, feta cheese and nachos on top. Garnish the quinoa-avocado salad with fresh mint.

Nut lovers can add some pine nuts to the quinoa-avocado salad before serving.
