For the quiche with sardines and fennel, first mix and knead all the ingredients for the dough. Leave to rest in a cool place for half an hour.

Roll out the dough into a round shape (about 35 cm ø) and place in a quiche dish (alternatively a springform pan). Pre-bake at 200 °C for about 15 minutes.

For the topping, wash the sardines, cut into cubes and mix with lemon juice and zest. Clean the fennel and cut into slices. Wash and slice the tomatoes.

Cover the dough base with fennel, tomatoes and sardines. Season with salt and pepper. Drizzle olive oil over the top.

Bake in the heated oven at 200 °C top/bottom heat (convection oven 170 °C, gas mark 3) for about 50 minutes. If necessary, cover the quiche with sardines and fennel with baking paper after half the baking time so that it does not become too dark.

Garnish with fennel greens before serving.

Preparation Tip:

If you don't like sardines - cooked ham also tastes great on the quiche.
