Instructions:

Press the cooked potatoes while still hot through a potato press, mash or finely grate.

Stir the lukewarm water with the yeast and sugar, set aside for 10 minutes.

Put the flour with the salt in a large enough bowl, add the yeast mixture and knead thoroughly until the dough bubbles.

Then add the lukewarm potato mixture, work well and let rise at room temperature for about 30 minutes (until doubled in volume).

Grease the bottom of a loaf pan (30 cm long) with butter.

After resting, knead the dough vigorously, pour it into the loaf pan, let it rise for another 20 minutes.

Preheat the oven, put a mug of water on the broiler.

Bake in the oven at 200 °C for about 60 minutes (lower rack).
