For porcini pasta, knead spelt flour with oil, sea salt, egg, nutmeg and water as needed to form a smooth dough and let rest covered for about 60 min.

Roll out dough into sheets and run through pasta machine or cut into fine strips by hand. Let pasta dry a bit and then cook in salted water until al dente.

Cut mushrooms into slices. Peel garlic, wash parsley and chop both finely. Sauté garlic, mushrooms and parsley in butter, add pasta and season porcini pasta with salt and freshly ground pepper.

Porcini noodles can also be made with store-bought pasta - reach for wholesome spelt noodles for a valuable meal with it!
