(mass is enough for a baking dish of 300 mm ø) Cook yeast dough. To do this, strain the flour into a container and press a bulge in the center. Melt the yeast with the sugar in a little bit of warmed cow’s milk, pour it into the hollow and stir it lightly with a little bit of flour.

Dissolve the butter in the warm milk. As soon as the steam starts to bubble, add the cow’s milk, the egg and a little salt. Knead the ingredients together properly and place the baking bowl – covered with a clean kitchen towel – in a warm place. When the dough has doubled, knead it one more time and roll it out to a thickness of 5 mm. Put the top into tart springform pan and raise a rim of dough. Sprinkle the bottom with breadcrumbs. Place the washed and pitted plums on top.

Bake in heated oven at 175 degrees Celsius for 50 to 60 min. Then loosen the edge of the tart springform pan and sprinkle the plum cake with a mixture of sugar and cinnamon.

Tip: Cinnamon gives dishes a wonderfully sweet and spicy note!
