For the pineapple curry, sauté the finely chopped onion in coconut oil. Add the very finely chopped, peeled ginger root, the peanuts and the mixed vegetables. Squeeze in the garlic cloves.

Fry well. Season with curry powder and salt. Add the pineapple cut into small pieces. Add a little soy sauce. Steam until soft. In the meantime, cook a cup of rice.

Mix the cooked rice with the pineapple curry and serve.

Preparation Tip:

If the pineapple curry is too dry, add a little pineapple juice.
