For the paradeis soup, heat the oil in a very large saucepan and sauté the finely diced onion, add the garlic. Meanwhile, cut the tomatoes in half and remove the green stalk.

Then add the tomato pieces to the onions and add the soup powder and all the herbs. Now cover the pot briefly, let everything boil up – this way plenty of liquid is formed and you don’t need to add water.

Then stir well, turn the heat down to low (so that the mixture simmers slightly and reduces). After about an hour, fish out the bay leaf and strain the rest through a float or sieve.

Season to taste with salt and pepper. Using a funnel, pour the remaining soup into canning jars and simmer at 95 degrees for about 30 minutes. This way the soup will keep for quite a long time.

Preparation Tip:

Yields about 2000 ml, so 4 pcs 500 ml jars of parade soup.
