For the Caprese pancakes, first prepare the pancake batter.

Mix flour, milk and tomato paste well, then add salt and eggs. Bake thin pancakes in a pan with a little butter. Let them cool down a bit, roll them up and cut them into thin strips.

Mix vinegar, olive oil and honey and season well with salt and pepper.
