Instructions:

Cut sausage into slices and cut off pork. Peel skin from chicken and cut meat into small pieces. Cut garlic and onion into small pieces. Clean, rinse, seed and cut peppers into strips. Peel tomatoes and cut into quarters (I do not peel, but rather cut smaller).

Heat oil in saucepan and fry pork and sausage in it (about 5 min). Season with salt if necessary. Add peppers, garlic, onion and tomatoes and sauté for 5 min. Add mussels and shrimps and stew for about 3 min.

For the long grain rice there are several variations:

a) Make long grain rice separately with mussel water, clear soup, sherry, a little pea water and saffron. When the long grain rice is ready add meat, clams, etc. Add on top. In this variation, start with the long grain rice at the beginning.

b) Sherry, long grain rice, clear soup, clam water, a little pea water, saffron and meat, etc. Dump into a saucepan, stir and cover and cook (15-20 min).

c) Put clear soup, long grain rice, sherry, mussel water, a tiny bit of pea water and saffron in paella pan or possibly large frying pan. Add meat, etc. Add to it. Cook for 15 to 20 minutes.

If there is not enough liquid, add water.

Season with spices and garnish with lemon slices.
