Fresh dates are imported frozen from Israel year-round and are usually offered fresh thawed. They are fleshier and less sweet than the dried ones, peel well, and are the basis for healthy desserts.

Grease a large, shallow gratin dish (diameter 26 cm). Peel the oranges and separate the individual segments from the fruit with a sharp kitchen knife. Collect the juice that runs out in the process. Cut the dates in half and remove the stone, if necessary peel off the skin. Mix curd cheese with maple syrup, flour, egg yolks, orange juice, semolina and grated almonds. Whip the egg whites to stiff peaks and stir in. Pour curd cream into the greased mold. Place orange fillets and date halves on top in a star shape. Cook the soufflé at 600 watts for 15 minutes. Sprinkle with powdered sugar while hot, spread on top.

If you want to cook the soufflé in the oven, preheat it to 180 °C (gas mark 2) and bake it for half an hour until golden.

You can also bake a cake of sponge in the stove from the basic ingredients: Take only 200 g of curd, add additional 150 g of soft butter or light butter, 200 g of flour with 1/2 packet of baking powder and 4 tbsp of maple syrup. The baking time increases to 60 min.
