For the oatmeal pancakes coarsely grind chia seeds with a coffee grinder or in a mortar, mix with the oatmeal and the milk and let swell for about an hour.

Add salt, baking soda, lemon juice and cinnamon and mix well. Fry 8 small or 4 larger pancakes from the batter in a non-stick pan or pancakemaker.

Serve the finished pancakes with applesauce.

Preparation Tip:

The portion is enough for a sweet main course, or for 4 desserts. To the oatmeal pancakes also taste other fruit sauces or of course creamy sauces.
