Instructions:

For the oatmeal cookies, beat the butter with brown sugar and the vanilla pulp from the scraped vanilla pod until fluffy.

Add egg and continue beating briefly.

Beat in all other ingredients and spoon cookies onto baking sheet.

Let the cookies rest a bit before baking so that the cookies don’t fall apart (!).

Bake the oatmeal cookies at 180°C for about 15 minutes.
