Melt yellow sugar, butter and glucose in a saucepan and bring to the boil briefly. Mix boiling water with baking soda and add to butter-sugar mixture. Stir in remaining ingredients and mix well. Form thin rolls and refrigerate for 1 hour. Cut small thin pieces and place wide apart (cookies will spread) on prepared baking sheet and bake in preheated oven at 165 to 175 °C for about 8 to 10 minutes until golden brown on sight.

Preparation Tip:

If you have cooked the mixture too long, it will thicken. Then simply add a little more water. The pastry is excellent as an addition to ice cream creations.
