Instructions:

Melt fresh yeast in 125 ml lukewarm water and 1 pinch of sugar in a baking bowl, dust with flour and let rise for 15 min. Mix flour and salt in a baking bowl. Mix yogurt, 3 tbsp oil and dissolved yeast. Knead flour and yeast mixture together with the dough hook of a mixer or in a food processor until smooth.

Shape into a ball, brush with 1 tbsp oil and leave covered in a baking bowl in a warm place for 1 hour.

Divide dough in half, knead halves each heartily. Form into round loaves (20 cm dia.) and place on floured baking sheets or shape into floured bread baskets (26 cm dia.) to taste. Cover and let rise for another 40 minutes.

Carefully turn the loaves out of the baskets onto floured baking sheets.

Bake one after the other in the hot oven for 50 minutes at 200 °C (gas 3, convection oven for 1 hour at 180 °C ) on the 2nd rack from the bottom, placing a deep plate with boiling hot water on the bottom of the oven.

Preparation Tip:

Use creamy natural yogurt for an even finer result!
