Instructions:

For the mixed bread, mix the two types of flour in a large baking bowl. Make a well in the center, crumble the yeast into it and stir with honey and some lukewarm water. Let rise for about 15 minutes as indicated.

Gradually add the remaining ingredients to the dampfl and prepare the whole thing into a smooth loaf. Place the loaf in the greased loaf pan and let rise for another 15 minutes.

Score the risen dough with a sharp kitchen knife in a caro shape and pierce a few times with a toothpick. Brush with water and bake first at 230 °C for 15 minutes, then at 180 °C for 30-35 minutes.

Preparation Tip:

The mixed bread is ready when it sounds hollow when tapped.
