With smaller quantities should not work, leftovers freeze.

Finely dice the onions and apples and sauté in butter with the very finely diced garlic, parsley root and ginger. Pour in clear soup and Viez and simmer on low heat for 10 minutes.

Add the whipped cream and mash the soup, then simmer gently for 10 min. repeatedly. Cut the ham into thin strips, chop the parsley. Fry the ham strips in a little butter until crispy. Season the soup with salt, a little nutmeg and freshly ground pepper. Put the ham strips in warmed plates and pour the soup over them. Sprinkle with parsley and serve on the spot.

Serve with hay croutons: put 200 g of butter in a saucepan, add a handful of meadow hay and cook for one minute until soft. Pass everything through a sieve. Add the hay butter repeatedly to the frying pan and toast white bread cubes in it. Sprinkle these on top of the soup.

Tip: It is best to use your favorite ham – then your dish will taste twice as good!
