Instructions:

Make a smooth pasta dough from the ingredients, wrap in cling film and rest for half an hour.

Mix all ingredients for the filling and season.

Roll out half of the dough thinly, spread the filling evenly on it in heaps and brush the edges with egg yolk. Roll out the remaining dough, place it on top and cut out ravioli with a pastry wheel. Press the edges well smooth and cook in enough boiling salted water for ten minutes. Do not make them, otherwise they will burst.

Briefly foam the butter in a frying pan, add the breadcrumbs and kitchen herbs. Season strongly with salt and freshly ground pepper and let the ravioli melt with it.
