For matcha ice parfait, bring water to a boil and then let cool to about 80 degrees. Put the matcha powder in a large enough bowl and pour in the water and mix well. Then allow to cool.

Beat the eggs and separate them. Add the egg yolks and sugar to the matcha mixture and whip until very creamy.

Whip the cream with a pinch of salt until also stiff and gently fold into the green tea yolk mixture.

Pour into a shallow dish and place in the freezer for two to three hours. Keep stirring well with a cooking lump.

Pour into beautiful glasses and serve matcha ice cream parfait.
