Instructions:

Mix all ingredients up to and including salt in a baking bowl. Add buttermilk, crème fraîche, egg and orange zest and mix well. Mix in the chocolate cubes and pour the dough into the ramekins. Melt chocolate and cream in a not too hot water bath. Pour 1 teaspoon into the center of each muffin. With a small spoon, lightly fold in the batter, cutting it into a circle at the same time. This creates the marbling and a nice “Güpfli”.

Bake for about 20 minutes in the lower half of the oven heated to 200 °C (180 °C in a convection oven). Take out, cool on a rack.

Tip: Do you prefer milk chocolate or dark chocolate? Depending on the case, use whichever tastes better to you.
