Preparation : A rassolnik can be prepared on different basis: – with beef broth – with fish bullion or possibly with pieces of fish – with mushroom broth (from fresh or possibly dried mushrooms) Pearl barley is put into water or possibly bullion and boiled for 40 to 60 min. Root vegetables and onions are finely chopped and steamed in hot butter. Chop the potatoes and make them in the clear soup. Add the chopped cucumbers only when the potatoes are almost cooked, otherwise the potatoes will remain hard. Then add the vegetables steamed in butter, the bay spice and pepper. At the end, fill the soup with cucumber broth, if desired, and season with salt. Before serving, add the prepared pieces of meat or fish (or mushrooms steamed in butter). Smetana and bread are served with the soup.
