Instructions:

Heat oil (I) in a frying pan. Sauté leek in it at low temperature, cover and sauté for 10 min. until soft. Add zucchini and garlic and sauté for another 10 min. until soft. Transfer to a large enough bowl and cool. Add eggs, salt, pepper and cheese, mix well.

Heat oil (Ii) in frying pan. Pour in egg mixture and smooth the surface. Cook at low temperature for about 15 minutes.

Bake under the heated broiler for 2-3 min. Leave to rest for about 5 minutes before slicing.
