Instructions:

Clean leeks, cut lengthwise, rinse thoroughly. Cut white and light green parts of the leek into pieces of about 1/2 cm.

Cut the smoked meat into small cubes.

Heat a little oil in a frying pan, sauté smoked meat and leek for a few minutes. Add cream, cool a little.

Season leek-smoked meat mixture with salt and pepper, mix with grated cheese.

Roll out puff pastry, spread leek mixture on about 1/3 to half of the pastry.

Roll up strudel tightly, close well at the ends.

Brush with beaten egg yolk.

Prick strudel with a fork, bake in oven heated to 200 degrees for 30 to 40 minutes.

For herb sauce: mix sour cream and yogurt well.

Add minced kitchen herbs, pressed garlic clove.

Season with salt and white pepper.

Take the strudel out of the oven and portion it.

Serve with herb sauce and baguette. Add 2 to 3 leeks of seasonal herbs (e.g. parsley, tarragon, chives, chervil).

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these are also characterized by a fresh taste!
