For the spinach leaves with garlic sauce, wash the spinach thoroughly, remove coarse leaf stalks. Place in boiling salted water and allow to collapse. Strain in a sieve, drain well or squeeze a little with the back of a spoon. Then coarsely chop the spinach.

Peel the onion and chop into small cubes.

Heat a mixture of 2 tablespoons butter and 2 tablespoons oil in a saucepan and fry the onion cubes in it until golden. Add the spinach, season with salt and pepper and stir well.

Briefly roast the almond flakes in a pan without fat and lift them out. Finely chop the garlic cloves. Heat 1 tablespoon butter in the pan and roast the garlic briefly (it will become bitter if roasted too long). Stir in crème fraîche and whipped cream and add the flaked almonds.

Pour garlic sauce over the leaf spinach.
