Instructions:

Melt the clarified butter in a roasting pan and brown the Kassler all around. Rinse and clean the shallots, cut into rings, add and sauté. Rinse the plums, cut them in half, remove the seeds and add them to the meat together with the finely chopped thyme.

Add red wine and almond slivers to the pot and simmer for 40 minutes with the lid closed. Turn the roast to the other side after 20 minutes.

Remove the roast from the pot, arrange it in slices on a plate and keep it warm.
