Brush the mussels and remove any “baleen”. Then cook them in a saucepan with a little oil and a clove of garlic. As soon as they open, lift almost all of them out of the shell and filter the cooking stock. Season the cod fillets with salt, pepper, chopped rosemary, oregano and thyme, then roll them up and tie them with chive stalks. Chop plenty of garlic and parsley and place in a saucepan with 3 tablespoons of oil, the mussels (with and without shells), the cooking stock and the cod rolls form. Put the lid on and cook at high temperature for about 12 minutes. Serve very hot, perhaps offering toasted bread as a side dish.
