Pasta dishes are simply always delicious!

Preheat the stove to 80 °C and heat a plate with it.

Season the hoof steaks with salt and pepper. Fry them in the very hot clarified butter for one and a half to two minutes on each side, depending on the thickness. Immediately transfer to the preheated plate and cook in the oven at 80 °C for twenty to thirty minutes, depending on the desired degree of doneness.

Heat the butter in a small frying pan. Sauté garlic and parsley in it. Add Worcestershire sauce, mustard, tomato ketchup, cayenne pepper or Tabasco and cream. Cook over medium heat until the sauce thickens slightly. Season with salt and if necessary cayenne pepper or Tabasco.

Cut the hoof steaks diagonally to the meat grain into slices as desired, arrange on warm plates and pour sauce around them.

Serve with fine noodles, small potato halves fried in butter or possibly a wild rice mixture.
