For the elderberry pancakes, beat the eggs and add the milk. Stir in the flour, then the melted butter and salt. Mix until smooth and let rest for an hour.

Rub off the elderflower umbels. Stir the dough again and add some mineral water if necessary.

Heat a little fat in a pan and pour the dough in portions with a ladle. Sprinkle the elder flowers on top and turn the pancakes when the underside is lightly browned. Sprinkle the pancakes with powdered sugar and serve with chocolate sauce.
