For the Hazelnut Raisin Chocolate Cookies, preheat the oven to 180 °C, spread the hazelnuts on a baking sheet and roast for about 5 minutes until the skin of the hazelnuts cracks and the nuts underneath are lightly browned and fragrant.

Remove, rub with a clean dish towel until the skin is removed. Coarsely chop the hazelnuts and set aside on an oiled baking sheet. Leave oven at the same 180 °C.

The cookies should remain soft. Then remove from the oven and let cool on the tray.
