Preparation (about 40 min):

For the pasta dough, knead all ingredients together into a smooth dough, wrap in plastic wrap and rest in about 30 min.

Finely dice ham and mix breakfast sausage, curd cheese and chives. Rinse spring onions, cut into diagonal leaves. Clean apples, cut out and cut into wedges. Coarsely chop dried tomatoes, grate thyme. Peel lemon peel with a zester into fine strips. Squeeze the juice of one lemon.

Preparation (about 20 min):

Roll out dough, cut out circles, spread ham mixture evenly on top, brush with ice cream spread, seal and shape. Lightly boil in lightly salted water for 6 to 8 min.

Heat oil, brown onions, add tomatoes and apple slices and season with juice of one lemon and thyme. Add cooked tortellini to apples and onions, toss well, perhaps seasoning repeatedly with salt, pepper and a pinch of nutmeg.

Serve:

Divide tortellini evenly among plates, sprinkle lemon zest and grated cheese on top.
