Slovak Potato Gnocchi with Bacon and Brimsen Peel and finely grate potatoes. Prepare a smooth dough with flour, water and salt.

Press dough either through a spätzle sieve into boiling salted water. Or cut dumplings from the board with a kitchen knife in the “Slovak style” and place them in the water. Make dumplings briefly until they rise to the surface, remove, drain and pour cold water over them. Fry bacon cut into small pieces in a frying pan.

Mix well the dumplings and fritters with the crispy bacon including the fat. Serve immediately.

Our tip: Use a bacon with a strong flavor – so you give this dish a special touch!
