For gyros, first mix the marinade. To do this, mix olive oil, onions (finely chopped or pressed so that you have plenty of onion juice in the marinade), pepper, salt, cumin and kitchen herbs (thyme, oregano, parsley). Add garlic and other spices (e.g. cinnamon) to taste, but do not overload.

Let the meat sit in the marinade for a few hours or overnight.

Roast gyros in frying pan until crispy (but not dry) and bring to table with tzatziki and pita bread.

Preparation Tip:

Gyros goes well with a Greek farmer's salad, red wine and ouzo.
